It's a relatively nice day up on the hill. Did some errands this morning, came home and felt like the house should smell like banana bread. Told G that I will go home and make a loaf and he asked if I could make it with the flax and oats this time. It's just a basic banana bread recipe that my aunt gave me that I always add to or change a bit. Today I added oatmeal and cut back on the flour amount, added an extra banana and tablespoons of chia seeds and flax seeds.
Here is the Basic Recipe for Banana Bread
Pre-heat oven to 350
1/4 cup butter
1 cup sugar
1 beaten egg
Cream these ingredients together. In a separate bowl mix together
1/2 teaspoon salt
1 teaspoon baking soda
1 1/2 cups flour
Slowly add the dry ingredients to the creamed sugar and butter.
Once that is mixed add...
1 teaspoon of vanilla extract
Grease and flour a loaf pan or line a muffin pan. Pour batter into pan and bake for 60 minutes or until an inserted tooth pick come out clean.
